Chicken and Quinoa Salad

Chicken and Quinoa Salad

  • 100g cooked chicken, shredded
  • 1/2 cup quinoa (cooked = 1 cup)
  • Handful sweet cherry tomatoes sliced in half
  • ½ lebanese cucumber, diced
  • 2 tbsp pepitas
  • 2 tbsp almond slivers
  • 2 tbsp chia seeds
  • 2 tbsp goji berries
  • Handful of rocket leaves
  • ¼ bunch mint leaves, chopped
  • 1 teaspoon tumeric
  • 1/2 tsp cinnamon
  • 2 tablespoons lemon olive oil
  • Salt and pepper to taste

Add cinnamon and tumeric to cooked quinoa and combine. Add all other ingredients. Season generously. Add dressing on serving as desired.

 

Dressing:

  • 1/2 cup of thick, plain yoghurt
  • 2 tablespoons of tahini (sesame paste)
  • Zest and juice of 1/2 lemon
