- 100g cooked chicken, shredded
- 1/2 cup quinoa (cooked = 1 cup)
- Handful sweet cherry tomatoes sliced in half
- ½ lebanese cucumber, diced
- 2 tbsp pepitas
- 2 tbsp almond slivers
- 2 tbsp chia seeds
- 2 tbsp goji berries
- Handful of rocket leaves
- ¼ bunch mint leaves, chopped
- 1 teaspoon tumeric
- 1/2 tsp cinnamon
- 2 tablespoons lemon olive oil
- Salt and pepper to taste
Add cinnamon and tumeric to cooked quinoa and combine. Add all other ingredients. Season generously. Add dressing on serving as desired.
Dressing:
- 1/2 cup of thick, plain yoghurt
- 2 tablespoons of tahini (sesame paste)
- Zest and juice of 1/2 lemon
